It’s a salad. Everybody knows I’m not a fan of salad, right? But that’s really just the lettuce kinds. I like salads that don’t have lettuce. You know, like potato salad, pasta salad, and fruit salad! Yeah – those salads make me happy!
This quinoa salad makes me happy. Still, sister says in order to share things with you here they have to somehow be tied to beauty because “Beautygeeks.” This particular salad is beautiful for your guts. It really is. It’s “gluten-free, high in protein, and one of the few plant foods that contain all nine essential amino acids” says Healthline.com. See? Beauty.
I make this a lot, and every single time it’s just a little different. This time, because I’d just returned from the market, it has radishes and red onion in it. Usually, it doesn’t, but those things smacked me in the eye at the market so that’s what got thrown in. #eatlocal
You need a recipe? I don’t have one. I like to wing it. I open the fridge (cucumber), I open the freezer (frozen chopped kale), I open the pantry (found some chick peas) and stuff I think goes together (dried cranberries) gets chucked in there and then I make a dressing and voila! Salad!
